Potentiometers are standard these days, and it's how just about all joysticks on the market work these days. However, the N64's optic mechanism works very well. I think the menu screen itself just needs a little sprucing up, but is generally fine. A little animation with some sprites and maybe some sounds and I think it doesn't need much change at all.

Not much of a difference, because the low bandwidth of composite produces a similar effect anyway.
