How were 3-d roads in racing games rendered?

If you've seen any of my Brony Blaster videos then you might know I like to mess with $2006-$2005-$2005-$2006 tricks.
So I tried doing a simple road like in many NES racing games (I was trying to keep it rather simple, nothing like Rad Racer, more like Mafat Conspiracy's road segments) with similar tricks, but I can't figure out how a 3-d looking road is being rendered.
The closest thing I've got scrolls way too fast and is glitchy as **** :P
Does anyone have an idea on how those were done?
