I am trying to wire up a Metal Slader Glory Reproduction out of a Gunsight cartridge (same PCB design).

I found some EPROM/PCB wiring help here:

However, I am not sure if the individual accounts for different wiring for different boards which use MMC5.

Does anyone know what pins need to be lifted and also what holes need to be rerouted/go unused?

MMC5 carts always use the same pinout for both PRG and CHR (see outermost column).

For rework, compare the above to the datasheet of whatever memory you're using.
